A dates wholesaler Malaysia buyer relies on usually stocks more than one variety, and Sayer is one of the workhorse ones — an Iranian date grown in large volume, mid-priced, and used as much for everyday snacking as for baking. It doesn't carry the prestige pricing of Ajwa or the size premium of Medjool. What it offers instead is consistency: a semi-dry texture that holds up in transport and a flavour that isn't as sharply sweet as Mazafati, which makes it easier to sell to buyers who find the softer Iranian dates too rich.
Why grade and origin still decide the price
Sayer sold loose at a pasar malam and Sayer sold by the carton to a hotel kitchen are priced on the same two things: grade and moisture content. A drier, more uniform batch commands a better rate because it stores longer without clumping or fermenting. Compare that to Ajwa from Madinah, where scarcity around the Ramadan season pushes price up regardless of grade, or Medjool from Jordan, priced mainly on size — Jumbo costs noticeably more per kilo than a standard grade because fewer dates fill the same weight. A wholesaler who can't tell you the moisture grade of the Sayer batch in front of you is guessing, not grading.
Taste and texture: what actually separates the varieties
Sweetness is the easiest difference to notice — Medjool leans toward a heavy caramel note, Barhi is milder with honey undertones, and Sayer sits somewhere between the two: sweet but not cloying. Texture is where the real buying decision happens. Fresh dates like Rotab or Mozafati are soft enough to eat with a spoon and spoil fast, while Deglet Noor keeps a firmer, slightly chewy bite that's easier to slice for cooking. Sayer sits closer to the firmer end, which is exactly why it travels and stores better than the ultra-soft varieties.
Buying Sayer for resale
If you're reselling rather than eating, ask two questions before you commit to a carton: the harvest year and the storage temperature since arrival. A Sayer batch stored warm loses its texture within weeks even if it still tastes fine on the day you sample it.
